Orange Agave Chipotle Sauce
serve with either

Chicken
Mahi Mahi
Scallops
Lobster

Ingredients

½ diced red onion
3 cloves roasted garlic
1 chopped shallot
1 tsp olive oil
2 tsp salted butter
chopped cilantro
1 can orange juice concentrate
zest and juice of 1 orange
2 ½ oz Amber Agave Nectar
2 ½ cups water
salt & pepper (to taste)
chipotle to taste (for the heat)
Method

  1. Saute - onion, shallot, garlic w. oil & butter
  2. Add orange zest, orange juice, orange juice concentrate, Amber Agave Nectar and bring to boil.
  3. Add water, herbs and chipotle, bring to boil again and reduce for 10 minutes
  4. To thicken more, reduce in small sauce pan with butter.
